How to cook Thai sweet rice or Thai sticky rice?

In Thai Isan, Sweet rice is khao niao ( Thai: ข้าวเหนียว) Sticky rice can be found in many Asian dishes, mostly seen in Thai main courses. This specific kind of rice is named after the "glue-like" appearance that it has after being cooked.

Easy way to cook Thai Sticky rice.



#Step 1

Soak wash and clean sweet rice (as much as you want to make in one sitting) in water for at least half a day. Rinse the rice if needed. Rinsing or washing rice takes out nutrients as well as some of the starch components of the grains. However, it is optional for the taste. To do this, you can add water to the rice, rub the rice in your hands, drain the milky water, add new water, and repeat the process until the water is clear.

#Step 2

Drain rice and place it in cheesecloth and then place cheesecloth carefully in bamboo steamer.

#Step 3

Heat water in deep cooking pot until it boils. Make sure you put enough water in to last the whole process--45 minutes or more.

#Step 4

Place bamboo steamer containing cheesecloth and rice over pot, making sure that steamer does not come into contact with water.


#Step 5

Cover rice with cheesecloth and then cover steamer with an inverted plate or lid of some kind.


#Step 6

Steam for 45 minutes and check consistency. It's done when the rice is tender.

#Step 7

Once rice is cooked, remove it from cheesecloth immediately. Steam the rice. Drain the rice grains through a colander to get all of the water out. Use a Thai bamboo rice basket or a wire mesh rack over a steamer to cook the rice. Cook the rice for 30 minutes or until the rice is translucent.
